How Much Grass-Fed Beef Will I Get?

  • We raise Dexter cattle for several reasons...and size is one of them.

  • They are the perfect size for a year's worth of beef for a family of four. Not too much. Not too little.

    Example

  • Let's start with a typical live-weight, "on-the-hoof", 800 lb Dexter steer.

  • After harvest, its weight is reduced about 40%. This weight is known as "hanging weight" or "carcass weight". This includes all of the animal bones, meat and fat.

    • 800 lbs. x 60% = 480 lbs

  • The hanging weight is then packaged into your final cuts of meat. This "finished weight" is about 60-65% of the hanging weight.

    • 480 lbs x 65% = 312 lbs of grass-fed beef.

  • This is about 10 cubic feet of freezer space.

  • In the example above, a half-beef packaged into 156 lbs of grass-fed beef at $11.87 / lb = $1,851.72. Your total price will vary from this example based on actual weight and your instructions.
